How does this help a new forum with no posts?

I developed a site with 500 forums and will be making 1000 or so more. I have no members and just barely a few posts made by fake members I created.

How does this product help my site? Can it help an empty forum with only a title? I have no time to be writing 500 posts a day and I have no money to hire anyone.

When the posts do get created, they are SEO-ed immediately. This is an advantage.

Eventually, you will have lots of content (I assume) if you plan to make the forum successful. As that content continues to grow, it will always be SEO optimized if you have vBSEO installed.

If not, and you install vBSEO later, then you will have to rely on the 301 update process to update all of your old indexed pages to the new versions.

While option 2 certainly works for all of our customers, whenever someone starts a new forum and is able to install vBSEO right from the beginning, that is certainly the best case scenario.

Does digitalpoint use this software?

No DP does not and I believe they are making a mistake in that choice. They have good traffic but would have even better traffic when using seo'd urls.
