What does this actually do?

it's telling you how many urls of what type were submitted with your sitemap, and how that compares to your last sitemap submission.

It's basically a list of every content page on your site (the URLs), telling Google, Yahoo, MSN exactly what content you have for them, and exactly where to find it.
