What does the - and the +'s mean?

Is the total url's are the total of url's that have been indexed?

I think it means: the no. of URLs added or reduced since last sitemap generation.

For example :

Day 1:
Total URLs : 100

Day 2:
Total URLs : 120 (+20)

This means, on day 2, 20 new URL have been added in the sitemap, as compared to day 1.
