my SE bots activity log is emtpy

What did I miss?

Make sure:

the setting is enabled in vbseocp,
/vbseocp.php#log_opt

and that the /data/ and /hits/ folders in the vbseo_sitemap/ dir are writable (777)

I don't see that setting and there is not a /hits folder in that directory

vbseo_sitemap/data/hits/

should both be chmod 777.

there isn't a /hits in /data - should I create one and does anything else go in there?

And it was not turned on in settings.

I'm getting some stats now but should I still need the /hits directory?

The hits folder should be created automatically, assuming you have the logging enabled.
