Hello Jason ,
You can't see your indexed pages from google analytics. You can use Google Webmasters tool to check how many of your pages are indexed. Also you can use site:domain.com query within google however this query is not accurate anymore.

I've done that, I then click "Index Stats"... but I just see site:domain.com ..... what do I click so it says the number of indexed pages?

In Webmaster Tools->Sitemaps->Overview you will see:
Total URLs: xxxx
Indexed URLs: xxxx
